| Mario's Restaurant : Detroit Mi 1975 - 1980 Chef assistant, souse chef Mario's was built and operated by our family for over 50 years. I learned all my basic skills at this award winning restaurant. Golden Eagle : Rochester MI 1981-1987 Chef owner With my partner this was my first stab at running my own place. (The Eagle), as it is known was a bar and grill setup I had lots of good time and it is where I met my wife Amy. After what seemed a life time in the restaurant business I decided to back away and try something different. Lone Eagle Nursery: Kinderhook, Mi 1987 - present Landscaper, Greenhouse, landscape designer. This was Amy and I first business and what a lot of fun we had ( lots of work to). Built our house we still live in and turned 15 acres of corn into a full scale nursery and greenhouse. As our children got older I started to miss the restaurant business so I started studying and working in our kitchen getting back up on techniques. In 2000 we purchased The hatchery. Lelli's Hatchery: Angola, In 2000 till present Chef owner We are going on our 10th year in 2010 and we have made many changes. Our newest menu is my favorite taking traditional Italian pasta preparations and combining them with American style. I like to constantly change menus to keep the experience from turning into the same old thing. Philosophy : My old friend and chef once told me "you learn something new every day and you never know it all ". |
